Beef Ribs (Short Rib & Back Rib)

Two very different cuts get sold as beef ribs. Short ribs are the lower rib bones with a thick slab of muscle riding on top; back ribs are the upper half of ribs 6-12, the bones the ribeye was cut away from, so the only meat left on them is between the bones. Both want hours, but you buy them for opposite reasons — one for the meat, one for what's wedged between.

What it is

Short ribs come off the lower rib cage. Chuck short ribs are ribs 1-5, plate short ribs are ribs 6-9, and the meat sitting on those bones is mostly serratus ventralis — the big fan-shaped muscle that helps sling the ribcage between the shoulder blades — plus the intercostals underneath it. Back ribs are the top half of ribs 6-12 and they're a byproduct: the ribeye is the most valuable muscle on that section, so the butcher strips it off the bones and the rack goes out with whatever survived the knife. That means back rib meat is intercostal — the small muscles between each pair of ribs that pull the ribcage open with every breath the animal ever took. Constant, low-load work: fine fibers, dense connective tissue, strong flavor, and not much volume.

Why it cooks the way it does

Short rib meat runs 25-30% fat and it's laminated — sheets of muscle stacked with sheets of collagen and fat between them. That structure is why it can go to 205°F and stay moist: as the collagen between layers dissolves, the layers separate and rendered fat sits in the gaps. Intercostal meat on back ribs is leaner and denser but thin enough to reach conversion temperature fast. Both need the same thing, sustained time above 175°F with useful conversion running up to about 205°F, but a plate short rib needs six to eight hours to get there and a rack of back ribs needs three to four. Thin flanken is the exception that proves the rule: cut across the bones at 1/3 to 1/2 inch, every muscle fiber is severed to under an inch long, so toughness never gets the chance to matter and the meat grills in minutes.

Braise (English cut)
Why it works

Short ribs are built in layers with collagen between them, and liquid holds the whole stack in the conversion range until those sheets dissolve and the layers let go of each other.

How

English cut, 2-3 inch bones with at least an inch of meat on top. Brown hard on every face, then 300-325°F with liquid a third of the way up, covered, 2.5-3.5 hours. Done when the bone slides out clean. Chill overnight in the liquid — short ribs throw an enormous amount of fat, and cold it caps solid and lifts off in one piece, plus the meat firms up enough to reheat without collapsing.

Smoke (plate short ribs)
Why it works

Six to eight hours of dry heat converts the collagen while the surface builds bark, and at 25-30% fat the meat bastes itself the entire time with no wrap needed.

How

Three-bone plate ribs, 5-6 lb a slab. Salt and coarse pepper only. Membrane off the bone side. 250-275°F for 6-8 hours to probe-tender, usually 203-208°F measured between the bones. Rest 45 minutes, then cut between the bones — one bone is a portion.

Grill (flanken)
Why it works

Cutting across the bones at half an inch shortens every fiber to under an inch, so tenderness stops depending on collagen conversion and starts depending on geometry.

How

1/3 to 1/2 inch flanken. Marinate — soy, sugar or grated pear, garlic and sesame is the standard galbi build, and the sugar is doing real browning work in a two-minute cook. Screaming direct heat, 2-3 minutes a side, off as soon as the edges char. Anything thicker than 1/2 inch over direct fire is back to being tough.

Low roast or smoke (back ribs)
Why it works

The meat between the bones is thin, so the goal isn't rendering a slab — it's getting the intercostals past 190°F before the exposed surface dehydrates.

How

Membrane off, 275°F, 3-3.5 hours, wrapped for the middle hour if the surface is drying out. They're done when the meat has receded about a quarter inch from the bone ends and the rack bends easily when you lift it from the center. Sauce in the last 15 minutes only, or the sugar burns.

What ruins it

Grilling thick bone-in English-cut short ribs over direct heat

A 2-inch English cut is a stack of muscle sheets with collagen between every layer, sitting on a bone that conducts heat unevenly. Over direct fire the exterior passes 300°F and starts carbonizing long before the center reaches 175°F. Even if you nailed a medium-rare center, none of the interior collagen has had time to convert, so you'd be chewing through sheets of intact connective tissue sandwiched between layers of cooked meat. There's no recovery: the surface is already carbon, which is bitter and doesn't soften, and moving it into a braise afterward just steeps burnt char through the liquid and ruins that too. If you want short ribs off a grill, have them cut flanken-thin across the bones, or move the thick ones to indirect heat at 275°F and give them three hours.

Buying it

For braising, ask for English-cut short ribs, bone-in, 2-3 inch bone lengths with at least an inch of meat on top. Much of what gets sold as 'short ribs' is chuck ribs cut thin — mostly bone with half an inch of meat — and there's nothing there to braise. For smoking, ask for plate short ribs by number, NAMP 123A, a three-bone slab at 4-6 lb; that's the one that comes out looking like a dinosaur bone. For grilling, have them cut flanken across the bones at 1/3 to 1/2 inch. Boneless short ribs are usually chuck, not rib — fine in a braise, but you lose the bone's collagen and the shape. On back ribs, check that meat was actually left between the bones: scalped racks with nothing but membrane on them are common, because the ribeye takes priority on that primal, and they aren't worth buying at any price. Pull the membrane off the bone side yourself with a butter knife and a paper towel for grip.

Doneness: Braised or smoked short ribs: 203-208°F, though probe feel is the real cue — no resistance between the bones and the bone pulling clean. Back ribs: about 195-203°F, or when the meat has receded a quarter inch from the bone ends and the rack bends. Grilled flanken: pull as soon as the edges char, roughly 130-140°F, and the exact number barely matters because the slices are thin enough to eat tender at any doneness.

What's the difference between beef short ribs and beef back ribs?

Position on the rib bone and how much meat came with it. Short ribs are the lower half of the bones and carry a thick slab of muscle on top — that's what you braise or smoke as a main course. Back ribs are the upper half, the bones the ribeye is cut off of, so nearly all the top meat is gone before you ever see them and what remains is between the bones. Short ribs cost several times more per pound and earn it if you want meat on a plate; back ribs are cheap and eaten with your hands.

Why are my short ribs still tough?

Not enough time above 175°F. Short rib meat is layered muscle with collagen sheets in between, and until those sheets dissolve the layers won't separate — that failure to separate is exactly what 'tough' feels like in a short rib. Give it another 45-60 minutes and test by pulling the bone; when it slides out with no effort you're done. If instead they're falling apart but dry and stringy, you overshot, and running the oven hotter than 325°F is usually why.

English cut vs flanken — which one do I want?

English cut runs parallel to the bone, one bone per piece, thick. That's for braising and smoking, where hours of collagen conversion do the work. Flanken is cut across three or four bones in a thin strip, half an inch or less, and that's for grilling, because the fibers are severed short enough to be tender immediately. Swapping them fails in both directions: flanken disintegrates in a braise, and English cut burns on a grill long before the inside is cooked.

Do I need to remove the membrane from beef ribs?

Yes on back ribs and plate ribs. The membrane on the bone side is a sheet of connective tissue that doesn't render at cooking temperatures, doesn't take smoke, and blocks seasoning, so it survives as a papery layer you have to chew through and spit out. Slide a butter knife under it at one end, lift a corner, grab it with a paper towel and pull it off in one sheet. On English-cut short ribs it's usually gone with the trimming and short enough not to matter either way.
