What's the difference between Medjool and Deglet Noor dates?

Medjools are big, soft, and sticky with a deep caramel flavor — the ones you eat out of hand or stuff. Deglet Noor are smaller, firmer, and less sweet, better for chopping into baking, tagines, or salads because they hold their shape. Most 'date' recipes assume Medjool unless they say otherwise.

Why do farm-shipped dates taste so much better than grocery ones?

Good dates are tree-ripened and packed soft, then shipped fast so they stay that way. Grocery dates are often older imports that have dried out and hardened in storage and distribution, which kills the caramel texture.
