Add your brand →It's tightly seasonal: Oregon black run roughly December-March, Oregon white November-January, and European winter truffles October-March. Summer truffles fill part of the gap. Outside these windows you'll see 'sold out' — that's the season, not the business closing. Buy when your target truffle is in season and order for overnight delivery.
They can't be farmed at scale the way mushrooms can — most are wild-foraged (often with trained dogs), they're intensely perishable, and they must be air-shipped overnight to arrive usable. Scarcity plus speed plus a short season is the whole price story. A little goes a long way, which softens the blow.
Use it fast — fresh truffles fade within a week or so. Store it in a sealed jar in the fridge, often nestled with eggs or rice, which absorb the aroma (bonus truffled eggs). Shave it raw over hot pasta, risotto, or eggs at the very end; heat destroys the aroma, so never cook it hard.
They're different, not lesser. Oregon white truffles are prized for a bright, garlicky-fruity aroma and cost far less than Alba whites; Oregon blacks are earthier. Many chefs love them precisely because they're domestic, fresher on arrival (less transit), and a fraction of the import price. Try both if you can.
