It's tightly seasonal: Oregon black run roughly December-March, Oregon white November-January, and European winter truffles October-March. Summer truffles fill part of the gap. Why are fresh truffles so expensive?

They can't be farmed at scale the way mushrooms can — most are wild-foraged (often with trained dogs), they're intensely perishable, and they must be air-shipped overnight to arrive usable. How do I use and store a fresh truffle?
