Their pages state it plainly: all meat products certified by the Halal Food Standards Alliance of America, hand-cut, no stunning.

What's the difference between full-blood, purebred, and American wagyu?

Full-blood means 100% Japanese Wagyu genetics with nothing else in the line. Purebred is bred up to roughly 93–97% over generations of crossing. 'American wagyu' usually means a wagyu-Angus cross, often about half — still well marbled, but a different animal. One Stop Halal sells full-blood; Bulls I Halal sells the American Wagyu cross and says so.

What does a Beef Marbling Score actually tell you?

BMS is the Japanese 1–12 scale for how much fat is webbed through the muscle. Around 4–5 eats like a good US prime; 7 and up is noticeably rich; 9–10 behaves more like a tasting portion than a steak dinner. Higher isn't automatically better — most people find four to six ounces of BMS 9 is plenty.

Why is halal wagyu harder to find than halal ground beef?

Highly marbled cattle are finished for 20 to 30 months and processed at a handful of specialized plants, and getting a zabiha crew and a certifier into that schedule is the hard part. Most wagyu never goes through it. The certified halal wagyu that exists comes from small operations that arranged their own harvest.

How should I cook a heavily marbled steak?

Hot, fast, and less of it than you think. Salt it, get cast iron very hot, sear a couple of minutes a side, and pull it earlier than you would a lean steak — the fat renders quickly and a well-done wagyu is money burned. Slice thin against the grain and serve about four ounces a person.
