What makes cold-pressed juice different?

A hydraulic press extracts juice without the heat and oxidation of a spinning centrifugal juicer, and it's never pasteurized with heat — so more of the fresh flavor, color, and nutrients survive. The trade-off is a short shelf life, which is why real cold-pressed juice ships cold and fast rather than sitting warm on a shelf.

Is store 'not-from-concentrate' juice the same thing?

No. Most shelf-stable juice, even 'not from concentrate,' is heat-pasteurized for a long shelf life, which cooks off delicate flavor and nutrients. Some is literally reconstituted concentrate. Cold-pressed, unpasteurized (or cold-pressured) juice is a different, fresher product.

What is HPP, and does it still count as raw?

High-pressure processing uses cold water pressure instead of heat to knock out microbes, extending shelf life while keeping the juice essentially raw in flavor and nutrition.
