The issues are flavored coffee, where the flavor compound arrives dissolved in a carrier that may not be kosher, and shared equipment — a drum that just roasted a dairy-flavored batch. Certification covers the whole plant, including whether the flavored line touches the plain one.
It depends on the process. Solvent-based decaffeination uses chemicals a certifier has to approve; Swiss Water and CO2 processes use only water or carbon dioxide, which sidesteps the question entirely. If you keep kosher and buy decaf, water-process is the simplest answer.
Whole beans are at their best roughly four days to four weeks off roast — they need a few days to degas, then decline steadily. Ground coffee loses most of its aromatics within an hour. Buy whole beans with a roast date printed on the bag, not a best-by date, and grind at home.
