Can't I just sprout regular garden seeds?

You shouldn't. Seeds sold for sprouting and microgreens are tested for germination rate and, importantly, screened for the pathogens that matter when you eat the raw sprout. Garden seed is sometimes treated with fungicides and isn't handled to food-safety standards. Buy seed labeled for sprouting — that's what these companies sell.

What's the difference between sprouts and microgreens?

Sprouts are germinated seeds you eat whole — root, seed, and shoot — usually grown in a jar over a few days. Microgreens are grown a little longer in soil or a mat and harvested by snipping the stem above the roots, at the first-true-leaf stage. Same seed families, different method and yield.

Which seeds are best to start with?

Broccoli and alfalfa are the classic beginner sprouts — fast, reliable, and mild. Radish adds a peppery kick. For microgreens, pea shoots and sunflower are forgiving and productive. True Leaf and Todd's both sell starter mixes so you can try several at once.
