Atlantic cod was overfished to near-collapse, so much supermarket cod is now Pacific or Atlantic cod caught abroad, sometimes shipped to Asia for processing and back. Buying from US day-boats and fisherman collectives keeps it domestic, in-season, and traceable.
Cod, haddock, pollock, and hake are interchangeable flaky mild fish. Halibut and sablefish (black cod) are firmer and richer — sablefish especially is buttery and forgiving. Ask any of these makers what's running; a fresher in-season species beats a specific frozen one.
