Cod & White Fish Worth the Hunt

Cod, haddock, halibut, sablefish — the everyday white fish that got hammered by overfishing and now mostly arrives as anonymous, twice-frozen blocks from the far side of the world. Buying from day-boats and fisherman-owned outfits gets you US-caught, traceable fillets. These independents ship them.

How this list works. Every maker here is small or independent, actually ships what it makes, and earns its spot on merit — nobody pays to be listed. US-caught, traceable white fish from day-boats and fisherman collectives.

Straight Answers
Cod & White Fish FAQ
Is frozen white fish worse than fresh?

For white fish, often the opposite. Cod or halibut flash-frozen at sea (Sitka) or fresh at the pier (Wulf's) can be better than 'fresh' fillets that thawed days ago in transit. The real questions are where it was caught and how fast it was frozen — not fresh-vs-frozen.

Why does so much cod come from overseas?

Atlantic cod was overfished to near-collapse, so much supermarket cod is now Pacific or Atlantic cod caught abroad, sometimes shipped to Asia for processing and back. Buying from US day-boats and fisherman collectives keeps it domestic, in-season, and traceable.

What white fish should I substitute in a recipe?

Cod, haddock, pollock, and hake are interchangeable flaky mild fish. Halibut and sablefish (black cod) are firmer and richer — sablefish especially is buttery and forgiving. Ask any of these makers what's running; a fresher in-season species beats a specific frozen one.

What does 'dayboat' mean?

A dayboat goes out and returns the same day, so the fish is only hours old at landing — versus factory trawlers that stay out for days or weeks. Red's Best and the CSFs here are built around small dayboats, which is why the fish is fresher and the fisherman is independent.
