Height comes from two things people skip. Fold the dough over itself three or four times before cutting — that's where the layers come from. And cut straight down without twisting the cutter, because twisting seals the edges shut and the biscuit rises lopsided or not at all.

The ratio2 cups flour + 1 stick frozen butter + ¾ cup cold buttermilk. Fold 4 times, cut without twisting.

The Ingredients — and where to get them
Cook for 8 biscuits
Plain flour
Two cups. Southern bakers use a soft low-protein flour, which makes them noticeably more tender.
2 cups
Frozen butter
One stick, grated on a box grater. Grating frozen butter is faster than cutting it in and gives better layers.
½ cup
Buttermilk
Cold, three quarters of a cup. Real buttermilk — the acid reacts with the baking powder for lift and adds the tang.
¾ cup
Baking powder and soda
A tablespoon of powder and a quarter teaspoon of soda. That's more powder than looks right and it's correct.
1 tbsp / ¼ tsp
Local / market
Salt
A teaspoon.

  4. Cut straight downPat to an inch thick, then punch straight down with a floured cutter and lift straight up. No twist. Push the scraps together gently for the last one.
  5. Bake them touchingSides touching on the tray so they support each other upward. 425°F, fifteen minutes, until deep gold.
  6. Butter the tops hotStraight out of the oven. It softens the crust and makes them look like the ones you're picturing.
