How to Make Yogurt, and where to source it

How to Make Yogurt — 5best2buy.com 5BEST2BUY.COM How to Make Yogurt Basics 5best2buy.com

Two temperatures decide everything. Heating to 180°F denatures the proteins so the set is thick rather than grainy — skip it and you get drinkable yogurt. Cooling to 110°F before adding the culture matters just as much, because anything hotter kills the bacteria you're paying for.

The ratio1 quart milk → 180°F → cool to 110°F → stir in 2 tbsp live yogurt → hold warm 8 hours.

Two tablespoons of any plain yogurt with live cultures on the label. This is your starter and every future batch can start from the last.
2 tbsp
Milk powder
Two tablespoons, optional, for a noticeably thicker result without straining.

The Method
  1. Heat to 180°FSlowly, stirring so it doesn't catch on the bottom. Hold it there five minutes. This is the step that decides the texture.
  2. Cool to 110°FA sink of cold water speeds this up. Use a thermometer — 110°F is warm to the touch, not hot. Too hot kills the culture and you get milk in the morning.
  3. Temper the starterWhisk the yogurt with a cup of the warm milk first, then stir that back into the pot. Adding it straight in makes lumps.
  4. Keep it warm eight hoursOven with the light on, a cooler with a jar of hot water, or a wrapped pot in a warm corner. It needs a steady 105–110°F and to be left completely alone.
  5. Chill before judgingIt sets further in the fridge. Four hours minimum before you decide whether it worked.
  6. Strain for GreekThrough cheesecloth for two hours and it becomes thick Greek yogurt. The liquid running off is whey — good in bread and smoothies.
  7. Make it yoursStir in raw honey and vanilla extract after it sets, never before. Fruit preserves at the bottom of the jar. Save two tablespoons every time and you never buy a starter again.
The Toolkit

Thermometer · Heavy pot · Cheesecloth
