Infused, unsweetened β€” and why it fails

Use
Nothing. This is the one in the batch that does not work as a cold infusion.
Method
Capsaicin hardly dissolves in cold water, and a habanero carries 100,000 to 350,000 Scoville units of it against a jalapeno's 2,500 to 8,000. The small fraction that does come out comes out unevenly, so the jug is mild at the top and vicious at the bottom, and the apricot smell that makes habanero worth using stays locked in the pepper. Go to the syrup and dose it by the quarter teaspoon.

The syrup

Ratio
1 habanero, halved with seeds and pith cut out : 1 cup sugar : 1 cup water
Method
Gloves on. Simmer the sugar and water until clear, drop the two halves in, take it off the heat, and taste with a spoon and a glass of cold water beside you starting at 5 minutes. Pull the pepper the moment you feel it at the back of the throat, usually between 5 and 10 minutes. Strain.

About 1.25 cups
Keeps
1 month refrigerated. The heat climbs for the first 2 days in the fridge, so what you bottle on Monday is hotter on Wednesday.
Note
One pepper per cup of sugar is the ceiling for something you intend to drink. Deseed it, because the pale pith the seeds are attached to holds most of the capsaicin. Gloves are the practical move here: habanero oil survives several hand washes, and soap and hot water is the only thing that shifts it.

The finished soda

1/4 teaspoon syrup to 8 oz sparkling water, over ice, lime and a pinch of salt
Quarter teaspoon, then wait a full thirty seconds before deciding whether to add more. Habanero heat arrives late and people overpour in the gap.
What doesn't work: Treating it like a jalapeno and using a whole sliced pepper with the seeds in. One habanero carries roughly forty jalapenos worth of capsaicin, so a recipe reading "two peppers, sliced" produces a syrup nobody at the table can drink and a pan you have to open a window for. Half a pepper, deseeded, is a full batch.
