What to use instead of rye bread
It depends entirely on what it's doing in the dish. Here's the job, what else does it, and what to skip.

Sturdy slice that holds a wet sandwich filling
Rye holds a lot of water in a tight, dense crumb, so it takes corned beef, dressing and sauerkraut without going through at the middle.
Sourdough cut thickRan out
2 slices cut 1/2 inch thick
Tangy in the same direction and just as strong. Bigger holes, so dressing drips through if you overload it.
PumpernickelRan out
1:1 by slice
Denser and much darker with a sweet molasses edge. Heavy eating, and it dominates a mild filling.
Firm white sandwich bread, toastedRan out
2 slices toasted until stiff
The toasting is doing all the structural work. No caraway and no sour, so a reuben tastes like a grilled cheese with beef in it.
Gluten-free seeded loaf, toasted hardGluten-free

Holds only if toasted properly, and it goes stale and crumbly on the plate within about twenty minutes.
What doesn't work: Brioche or challah. Both are enriched and soft, so the crumb compresses under the meat and dissolves wherever the dressing touches, and the sweetness fights the mustard.
Caraway and sour flavour under cured meat
The sour crumb and the caraway cut through salt and fat, which is why rye sits under pastrami and white bread does not.

Gets the aroma without the sour. The seeds toast in the pan and come through stronger than baked-in caraway does.

All the rye flavour and none of the give. Open-faced only, since it shatters the moment you press the sandwich.
What doesn't work: Assuming marbled rye is twice the rye. The dark swirl is usually caramel colour and cocoa, so a marbled loaf can carry less rye flour than a plain one and eats sweeter under salty meat.
