The tail, cut crosswise into segments. Almost nothing but bone, marrow, cartilage and hard-worked muscle wrapped in connective tissue — which makes it a poor piece of meat and the single best source of body in a braise anywhere on the animal.
The tail is a chain of vertebrae, tapering from a thick base to a thin tip, sold cut between the joints into rounds an inch or two thick. Each segment is a cross-section of bone with a marrow core, surrounded by small muscles that spend the animal's life in constant low-level motion, all bound together by heavy sheets of connective tissue and cartilage. The pieces from the base are meaty and the ones from the tip are almost entirely bone, which is why a package sold by weight can be a poor buy if it's all thin end. It was genuinely cheap within living memory and is not any more, largely because chefs worked out what it does to a sauce.
The highest ratio of collagen to muscle of any commonly sold beef cut. Over three to four hours above 160°F that collagen hydrolyzes into gelatin and dissolves into the surrounding liquid, giving a viscosity and mouthfeel that no starch or reduction reproduces — a properly cooked oxtail braise will set to a firm jelly in the fridge. The marrow contributes fat and its own emulsifiers. The muscle itself is fine-grained and, once the connective tissue holding it together has gone, falls into short tender shreds. Nothing about this is fast: the collagen load is so high that under-cooking by even forty-five minutes leaves it noticeably chewy.
The definitive treatment. Enough time above 160°F for a very heavy collagen load to convert, with the gelatin going straight into the sauce.
HowBrown very hard — the surface area is high and browning is most of the flavour — then 300°F covered with liquid two-thirds up, three and a half to four hours. Chill overnight, lift the fat, reheat. Meat should slide off the bone with no pressure.
Higher temperature accelerates collagen hydrolysis, turning a four-hour braise into just over an hour.
HowBrown first, then fifty to sixty minutes at high pressure, natural release. Reduce the liquid hard afterwards. Slightly less depth than a long oven braise, and most of the benefit.
The gelatin yield is so high that oxtail added to a stock pot produces a stock that sets like rubber, which is the point of most Caribbean and Chinese oxtail soups.
HowBlanch first to clear the scum, then simmer four hours with aromatics. Skim often. The result gels firmly when cold, which is the sign it worked.
The gelatin body pairs with ground nut thickeners, and the long cook lets the sauce and the meat exchange flavour completely.
HowSimmer the oxtail three hours until tender, then build the sauce with ground toasted peanuts and annatto in the strained liquid, returning the meat at the end.
Oxtail looks tender long before it is. After two and a half to three hours the exterior has softened, the liquid has coloured and the fat has rendered, and it presents as finished — and then every mouthful has a chewy, rubbery quality that people mistake for the cut simply being like that. It isn't. Oxtail carries more collagen per gram of muscle than almost anything else in the butcher's case, and collagen conversion is a rate, not a threshold: the sheets of connective tissue between those small muscles need the full three and a half to four hours above 160°F to hydrolyze. The tell is whether the meat slides off the bone under its own weight when you lift a piece with tongs. If it clings at all, it is not done, and the only remedy is another forty-five minutes.
Ask for pieces from the thick end — a package of nothing but tail-tip rounds is mostly bone and poor value at current prices. Segments an inch and a half to two inches thick with a visible ring of meat around the bone are what you want. It is no longer a cheap cut and has not been for years, so compare price per pound against short rib before assuming it's the budget option. Frozen is common and perfectly acceptable here, since the long cook makes texture damage from freezing irrelevant. Figure a pound per person, since a large proportion of the weight is bone.
Doneness: Not a temperature cut. Three and a half to four hours at 300°F, or fifty to sixty minutes under pressure. Done when the meat falls off the bone under its own weight and the liquid gels solid when chilled.
Supply and demand both moved. There is only one tail per animal and it's a small fraction of the carcass, and over the last two decades restaurant and home cooks worked out that the gelatin it produces can't be faked. It went from an offcut sold cheaply to a specialty item. Short rib and beef shin will give you a similar richness for less money, though neither quite matches it.
For a clear soup or broth, yes — cover with cold water, bring to a boil for ten minutes, then drain and rinse the pieces. It removes the scum that would otherwise cloud the liquid. For a dark braise where you're browning the pieces anyway, skip it; browning is doing more for flavour than blanching would do for clarity, and you'd be washing away what you want.
Chill some of the liquid. If it sets to a firm jelly you can turn a spoon in, the collagen has hydrolyzed into gelatin and the meat will be tender. If it stays liquid or only slightly thickened, it needed more time — and so did the meat. It's a more reliable test than probing, because the tail's shape makes internal temperature readings inconsistent.
