Can I substitute ginger for galangal?

Not really. Galangal is sharper, more citrusy and piney, almost medicinal next to ginger's warm sweetness — it's the defining note in tom kha and many curry pastes. Ginger will taste wrong, not just weaker. If you truly can't get galangal, frozen or dried galangal beats fresh ginger; ginger is a last resort that changes the dish.

How do I store fresh lemongrass and galangal?

Both keep in the fridge for a couple of weeks wrapped loosely, but they freeze beautifully for months, which is the smart move. Freeze lemongrass stalks whole or sliced; freeze galangal in chunks and grate or slice from frozen.
