Isn't millet just birdseed?

It's the same plant, but a different grade. The millet in a bird feeder is often unhulled and cleaned for animals; food-grade proso millet is hulled and cleaned for people. Millet is a genuine human staple across much of Africa and Asia — the birdseed association is mostly an American quirk.

How do I cook millet?

For a fluffy, couscous-like side, simmer one part millet to two parts water for about 15 to 20 minutes, then let it steam off the heat. For a creamy, polenta-style porridge, use more liquid and stir. Toasting the dry grain in the pot first deepens its flavor either way.

Is millet gluten-free?

What's the difference between hulled and whole millet?
