A good garam masala and real cream decide this gravy, far more than how much butter goes in at the finish. Before the chicken ever meets the sauce, char it hard under the broiler. That blackening gives you smoke and browning the simmer alone can never build.

Chicken thighs
Boneless thighs stay juicy through the char and the simmer; breast dries out and turns stringy in this gravy.

The Method
MarinateToss chicken with yogurt, half the garam masala, salt, and a spoon of ginger-garlic paste. Rest at least 30 minutes so the acid can work into the meat.
CharBroil the chicken on a rack 6 inches from the element until the edges blacken, about 8 minutes. You want real char, not just cooked-through.
Build gravyCook onion soft in butter, add ginger-garlic and remaining garam masala for a minute, then blended tomatoes. Simmer 20 minutes until it darkens and the raw tomato edge is gone.
FinishAdd the charred chicken, then stir in cream and cold butter off the heat. Never let it boil after the cream goes in or the gravy will break.
Can you make Butter Chicken in an air fryer? — Yes, with an insert
Not on its own — an air fryer can’t hold a pool of liquid. You can simmer it in an oven-safe dish or a silicone insert made to fit the basket, but the broth won’t reduce or brown the way it does on the stove, and that insert comes out scorching, so use oven mitts. For real depth, a pot on the stove wins.
Can you freeze Butter Chicken? — Yes
Yes — it freezes well. Cool it fully, portion into airtight containers, and it keeps a few months; thaw in the fridge and reheat gently.
Can you make Butter Chicken ahead of time? — Yes
Yes — it holds well and often tastes better the next day. Make it ahead and reheat gently before serving.
Is Butter Chicken gluten-free? — Yes
Yes — nothing in this recipe as written contains gluten. As always, glance at the labels on any packaged items (broth, sauces, chocolate), since brands vary.
Is Butter Chicken vegan? — No
No — it contains meat, so it isn’t vegetarian or vegan.
