Are Vidalia onions really different, or is it just marketing?

They're a defined thing: 'Vidalia' is legally restricted to sweet onions grown in a specific group of Georgia counties, where the low-sulfur soil makes them mild enough to eat closer to raw. They also only come fresh in a short late-spring-to-summer season. Outside that window, most 'sweet onions' in stores are other varieties, which is why buying in-season from a Georgia farm is worth it.

Is onion powder as good as a fresh onion?

For depth of flavor in rubs, dressings, and sauces, good pure onion powder is excellent and far more convenient. What it can't do is give you the texture or the sweetness of a caramelized fresh onion. The bigger issue is quality — a lot of commodity onion powder is stale or cut with garlic, so a single-ingredient jar from a house that packs its own is a real upgrade.

What's the difference between shallots and onions?

Shallots are a smaller, milder relative with a subtler, slightly garlicky sweetness and a finer texture, which is why they show up raw in vinaigrettes and pan sauces where a raw onion would be too harsh.
