The Method
PoachBring water to a bare 180F with a splash of vinegar, swirl a vortex, and slide each egg into the center. Cook three minutes for a runny yolk, then lift onto a towel.
HollandaiseWhisk yolks and lemon juice over a double boiler until ribboning, then stream in warm clarified butter drop by drop. Keep it below 140F so the yolks thicken but never scramble.
AssembleToast the muffins, sear the ham, and stack muffin, ham, egg. Spoon hollandaise over so it slides down the sides.
