The Method
Brown the mirepoix hardReal colour on the vegetables, ten minutes, no stirring for the first few. Pale mirepoix gives a pale sauce.
Darken the tomato pasteStirred through the vegetables for two minutes until it turns brick-coloured and smells sweet rather than tinny.
Make the brown roux separatelyButter and flour in their own pan, medium-low, stirring almost constantly for fifteen to twenty minutes until it's the colour of a copper penny and smells nutty. This is the whole sauce.
Combine and simmerWhisk the stock into the roux gradually, then add the vegetables and herbs. Bare simmer, two hours, uncovered.
Skim relentlesslyFat and scum rise the whole time. Skim every fifteen minutes — this is what makes the difference between clean and muddy.
Strain and reduceThrough a fine sieve, pressing lightly. It should coat a spoon. Reduce it by half again and you have demi-glace, which freezes in cubes and turns any pan sauce into a good one.
Make it yoursRed wine reduced in at the end makes a bordelaise. Madeira or sherry for something rounder. A spoon of tamari deepens it without reading as soy.
