Pork belly is the boneless underside of the pig, built in alternating sheets of fat and thin muscle — roughly 35–50% fat by weight. Cooking it is two jobs on two different clocks: the fat needs long, moderate heat to render out of the tissue, and the skin needs a short blast of dry high heat to blister. Do them in the wrong order and you get a leather shell over unrendered fat.
The belly is the ventral wall between the front and hind legs, sitting below the loin once the spare ribs are removed. The muscles in it — rectus abdominis, the external and internal obliques, transversus abdominis — are broad thin sheets whose job is to hold the gut in, not to move the animal. They contract at low load and never bear weight, so they stay thin, fine-grained, and free of the heavy cross-linked collagen you find in a shoulder. What the belly does have is fat: a thick subcutaneous layer under the skin plus fat deposited between each muscle sheet, which is where the layered cross-section comes from. Cured and smoked, this exact cut is bacon; cured flat and rolled, it's pancetta; salted heavily, it's salt pork. Fresh, it's the same slab with all the decisions still open.
Pork fat begins softening in the 85–95°F range and is fully liquid past about 110°F, but rendering it out of intact adipose tissue is a different problem from melting it — the fat cells have to rupture, and that takes sustained heat in the 250–300°F oven range for a couple of hours. The muscle sheets are thin and their collagen gelatinizes readily above 165°F, so they go soft well before the fat is done. The skin is the third material and behaves nothing like the other two: it's dense collagen holding a lot of water, and crackling happens when that water flashes to steam faster than the collagen can shrink, puffing the sheet into a rigid foam. That needs 425–475°F and a genuinely dry surface, which is why belly gets salted and left uncovered in the fridge 12–24 hours first — surface moisture steams the skin instead of puffing it. Fat also renders on its own once the temperature climbs, so a high-heat finish does both jobs at once, provided the interior already got its low-and-slow.
The two clocks run in sequence: hours at moderate heat rupture the fat cells and soften the muscle sheets, then a short blast flashes the water in the skin to steam and puffs it.
HowSkin-on center-cut slab, skin scored to the fat but not into the meat, dry-salted uncovered in the fridge 12–24 hours. 300°F for 2.5–3 hours until a skewer meets no resistance. Then 475°F for 20–30 minutes, watching, until the skin blisters across the whole surface. Rest 15 minutes, cut with a serrated knife.
Liquid holds the belly around 200°F, above the gelatinization threshold for the muscle sheets and hot enough to render fat steadily, while the surrounding braise catches what comes out.
How2 inch cubes or a whole slab, blanched 5 minutes then rinsed. Soy, sugar, aromatics, liquid halfway up. 275–300°F covered, 2–2.5 hours until a chopstick goes through the fat without pressure. Chill overnight, lift the solid fat cap off, reheat and reduce the sauce onto the meat.
A fixed 12-hour hold at 165–176°F converts the muscle-sheet collagen fully while staying below the temperature where the meat squeezes hard, and pressing it cold gives a flat face that sears evenly.
How167°F for 12 hours, or submerged in lard at 200°F for 3 hours. Chill flat under a weighted sheet pan overnight. Cut into rectangles, sear fat-side down in a dry pan from cold, 6–8 minutes, until the face is glass-brown.
Salt draws water out and drops water activity, nitrite from curing salt handles botulism risk and fixes the color, and smoke deposits phenols on a dried surface — all of it before any real cooking happens.
How2–2.5% salt and 0.25% cure #1 by the belly's weight, plus sugar and spice, bagged and refrigerated 7 days, flipped daily. Rinse, dry uncovered 12–24 hours until tacky, then smoke at 175–200°F to 150°F internal. Chill hard before slicing.
Skin and surface protein set within the first fifteen minutes at 425°F and up. Once that shell has formed and dried, the interior fat has no path out — rendering fat has to leave through the surface, and you've sealed it. The muscle sheets, meanwhile, are contracting at a temperature that will never gelatinize their collagen at that rate. The result is a rigid, dark exterior over greasy, half-rendered fat that eats slick and soft in the same bite. You can't back out of it either: dropping the oven to 300°F afterward will soften the crackling you already made while doing almost nothing for fat that's now trapped behind a set skin. Render first at 275–300°F for two-plus hours, blister last.
Ask for center-cut belly, skin on if you want crackling and skinless for braises and bacon. You want an even 1.5–2 inch thickness across the whole slab — the flank end tapers, and a tapering piece cooks unevenly enough that one end is leather while the other is raw. Look at the cut face: 4–6 clean alternating bands of fat and muscle, with the top subcutaneous layer no more than about a third of the total thickness. Fat should be firm and white; soft or yellow-tinged fat means an older animal or poor handling and it renders greasy. Confirm the spare ribs and any rib bones have been removed and the slab is squared. For roasting, a 3–4 lb rectangle is manageable; for bacon, buy the whole 10–12 lb belly and cure it in one piece. Heritage breeds — Berkshire, Duroc, Mangalitsa — carry thicker fat layers, which is what you want here even though it's a drawback in a loin.
Doneness: Rendered and tender is 190–203°F internal, or a skewer meeting no resistance through the fat layers. Sous vide 167°F for 12 hours reaches the same place by time instead of temperature. Skin needs surface heat at 425–475°F to puff, which is an oven setting, not an internal target. 145°F, the whole-muscle pork number, is meaningless here — the muscle is safe but the fat is unrendered, which eats slick and raw.
Same cut, different processing. Bacon is pork belly that's been cured with salt and nitrite, usually smoked, and sliced thin; the cure has already pulled water out and seasoned it through. Pork belly is the fresh, uncured slab. You can make bacon from belly with a week in the fridge, but you can't go the other way — bacon is too salty to use where a recipe wants fresh belly, and it will throw the seasoning of a braise completely.
Almost always surface moisture. Crackling forms when water inside the skin flashes to steam faster than the collagen can shrink, and a wet surface just steams instead. Score the skin, salt it, and leave it uncovered on a rack in the fridge 12–24 hours until it feels dry and papery. Then make sure the finishing heat is high enough — 425–475°F, not 375°F — and that the interior fat rendered first at a lower temperature, because rendering fat pushing up through the skin also keeps it from setting.
Only if you adjust for salt and smoke. Fresh belly has neither, so a carbonara or a stew built on bacon will taste underseasoned and flat. Cut the belly into lardons, render them slowly from a cold pan the way you would bacon, and add salt to compensate — roughly 1% of the belly's weight — plus a little smoked paprika if the smoke mattered to the dish. Pancetta is the closer swap: cured but unsmoked.
Separate the two stages. Cook at 275–300°F for 2 to 3 hours, which is hot enough to rupture fat cells and gelatinize the muscle collagen but too low to brown the surface hard. Only after a skewer slides through with no resistance do you raise the oven to 475°F for the final 20–30 minutes. If you're working in a pan instead of an oven, start the belly in a cold pan fat-side down over low heat and give it 15–20 minutes before the heat comes up — the rendered fat becomes the frying medium.
