The Method
  1. Make the tareSimmer soy, mirin and a little sugar with garlic and ginger into a concentrated seasoning base; a couple tablespoons goes in each bowl.
  2. Jammy eggsBoil eggs exactly 6.5 minutes, ice them, peel, and steep in a splash of the tare so the yolks stay soft-set.
  3. Heat the brothBring the bone broth to a hard simmer and skim it clear.
  4. Cook noodlesBoil the noodles to just-tender, drain hard, and portion into bowls over the tare.

Not on its own — an air fryer can’t hold a pool of liquid. For real depth, a pot on the stove wins.
