Baba Ganoush, and where to source it

Baba Ganoush — 5best2buy.com 5BEST2BUY.COM Baba Ganoush Middle Eastern 5best2buy.com

Blister the eggplant black over a live flame until it collapses; roasting it in the oven only steams it and you lose the smoke that is the entire point. Then drain the flesh hard in a strainer before the tahini goes in, or the dip turns watery.

The Method
  1. Char over flameBlister the whole eggplants directly over a gas burner or grill, turning, until the skin is fully black and the flesh sags. This is where the smoke comes from.
  2. Steam and peelRest them in a covered bowl 10 minutes, then peel off the burnt skin and pull out any big seed pockets.
  3. Drain hardSet the flesh in a strainer and let the bitter liquid drip out for 15 minutes. Skipping this is why most baba ganoush is soupy.
  4. Fold, do not blendMash the eggplant with a fork and fold in tahini, lemon, garlic, and salt. A processor makes it gluey, so keep it a little rustic.

Straight Answers
Can you make Baba Ganoush in an air fryer? — Yes

Yes — this is exactly what an air fryer does well. Work in a single layer so the air can move, and shake or flip halfway for even crisping. It runs a touch faster than the oven, so check early.

Can you freeze Baba Ganoush? — Not ideal

Not really — the cream, custard, or emulsion turns grainy or splits once thawed. This one is best kept fresh in the fridge.

Can you make Baba Ganoush ahead of time? — Prep ahead

Best fried to order — the crunch fades if it sits. Do the breading or shaping ahead and cook it fresh when you serve.

Is Baba Ganoush gluten-free? — Yes

Yes — nothing in this recipe as written contains gluten. As always, glance at the labels on any packaged items (broth, sauces, chocolate), since brands vary.

Is Baba Ganoush vegan? — Yes

Yes — no meat, seafood, dairy, egg, or honey in it as written.
