The Method
  1. Warm the milkGently, with the bay leaf if using. It doesn't need to boil, just take the chill off.
  2. Cook the rouxMelt the butter, whisk in the flour, and cook over medium-low for two full minutes. It should smell faintly of biscuits and stay pale — this is a white roux, so no colour.
  3. Add milk in three goesFirst third, whisking hard until it's a thick paste. Second third, whisking until smooth again. Then the rest. Adding it gradually is the entire anti-lump technique.
  4. Simmer to thickenEight to ten minutes at a bare simmer, whisking often. It's ready when it coats a spoon and a finger drawn through leaves a clean line.
  5. Season at the endSalt, white pepper, nutmeg. Salt last because the sauce reduces and concentrates as it cooks.
