The Method
  1. BloomSprinkle the gelatin over 3 tbsp cold water and let it sit 5 minutes until spongy.
  2. WarmHeat the cream, milk, sugar, and scraped vanilla to a bare steam (about 175F); do not let it boil.
  3. DissolveOff the heat, whisk in the bloomed gelatin until fully dissolved, then strain the mixture.
  4. SetPour into 6 ramekins and chill at least 4 hours until just set with a soft jiggle; top each with jam to serve.
