What is the difference between sucanat, muscovado, and turbinado?

Sucanat is whole dried cane juice with all its molasses intact, so it is the least processed and grainiest, tasting strongly of molasses. Muscovado is barely-refined cane sugar that keeps most of its molasses too, coming in light and dark and staying moist and soft. Turbinado (and demerara) is only partially refined — most of the molasses is spun off — so it is drier, coarse, blond, and much milder. Sucanat and muscovado are the truly unrefined ones; turbinado sits in between.

Is unrefined sugar actually healthier than white sugar?

Only marginally. Unrefined sugars retain trace minerals and a little more moisture, but they are still sugar and your body treats them nearly the same — the amounts of those minerals are too small to count as nutrition.
