Full puff pastry has 729 layers and takes two days. Rough puff gets you most of the rise in about a fifth of the time by skipping the butter block entirely: the butter goes in as large flattened chunks and the folding sheets it out as you go. For anything topped or filled, nobody can tell.
A teaspoon, optional — slightly relaxes the gluten and makes rolling easier.

The Method
Keep the butter in big piecesToss the cubes through the flour and salt and flatten each between your fingers. You want flat sheets of butter, not crumbs — the opposite of pie crust.
Add water minimallyIce water a little at a time until it just holds together. It will look ragged with butter streaks showing, which is exactly right.
Roll and letter-foldRoll to a long rectangle, fold in thirds. Turn 90 degrees and repeat. The streaks become layers.
Chill between every two foldsThirty minutes in the fridge. Four folds total. Warm butter merges into the dough and you lose the lift.
Rest before usingAn hour after the last fold, so it doesn't shrink in the oven.
Bake hot400–425°F. The lift comes from butter turning to steam, and that needs real heat immediately.
Make it yoursGrated parmesan folded in for cheese straws. Cinnamon sugar for palmiers. Freezes for three months rolled and wrapped.
