Ground lamb is shoulder, neck, and breast trim, usually landing around 20–25% fat. The single fact that governs how you cook and serve it: lamb fat has a melting point above human body temperature, so it goes solid in your mouth if the dish is anything less than hot. Everything else — why lamb is served straight off the fire, why kofta is thin, why lamb ragù wants tomato — follows from that.
Almost all ground lamb comes off the shoulder and neck, with breast and flap trim blended in. The shoulder and neck carry the head and the front of the animal and work constantly on uneven ground, so like every hard-working shoulder they're built with dense collagen, heavy fat seams, and a lot of small muscles pointed in different directions. Sheep also deposit far more fat subcutaneously and around the organs than cattle do relative to their size, and that fat is where the animal's characteristic flavor lives. Age matters more than in beef or pork: lamb is under a year, hogget is one to two, mutton is older, and the flavor compounds accumulate the whole time. A grind from a spring lamb and a grind from mutton are recognizably different products in the same package shape.
Lamb fat melts between roughly 110°F and 120°F. Mouth temperature is about 95°F, so lamb fat that has cooled below its melting point sits on the palate as a wax coating — that's the mouthfeel people describe as heavy, and it's a temperature problem, not a quality problem. The flavor people call gamey comes from branched-chain fatty acids, mainly 4-methyloctanoic and 4-ethyloctanoic acid, plus skatole; all of them are stored in the fat, none in the lean, and their concentration climbs with the animal's age and diet. So the intensity of a lamb dish is a direct function of how much fat is in the grind and how old the animal was. The protein chemistry is standard: salt at 1–1.5% by weight worked into the meat dissolves myosin into a tacky bind, which is the only thing that keeps a kofta on a skewer over a fire, and collagen chopped by the grinder gelatinizes within minutes rather than hours.
A thin cylinder over coals renders the fat fast and drips it onto the heat, and the meat comes off the fire above the fat's melting point so it never has a chance to set on the palate.
HowSalt at 1.25%, knead 3–5 minutes until the mass is sticky enough to hang off an upturned hand. Rest 30 minutes cold. Form around flat skewers at about 3/4 inch thick. Very hot direct heat, 4–6 minutes total, turning at 90-second intervals. Pull at 155–160°F and serve immediately.
Tomato and lemon cut through the fat's coating effect, and the sauce holds the dish above 140°F on the table so the fat stays liquid.
How1% salt, panade of bread and milk, roll 1.5 inch balls, brown them hard, then simmer 30–40 minutes in tomato at a bare bubble. The rendered lamb fat emulsifies into the sauce — leave it in.
Frying the grind hard drives off water and renders a good share of the fat out where you can control how much stays, which lets you dial the lamb intensity down without changing the meat.
HowHot pan, thin layer, 8–10 minutes until the crumbles brown and some edges crisp. Pour off however much fat you want gone, then bloom the spices in what's left. Simmer with liquid 20–40 minutes so the chopped collagen turns to gelatin and the crumble goes soft.
At 20–25% fat and 3/4 inch thick, the fat renders through the patty faster than beef fat does, so a lamb burger is done and still holding fat at a lower internal temperature.
How5–6 oz, 3/4 inch, salt only the surface. Direct heat 3 minutes a side to 155–160°F. Serve hot on a warm bun — a lamb patty that sits five minutes on a cold plate goes waxy.
Two things go wrong and they compound. Past about 165°F the fat has mostly rendered out of the grind, taking the water-replacement job with it and leaving contracted protein fiber. Then, as the plate cools, whatever fat is still in the meat crosses back below its 110–120°F melting point and solidifies — the mouthfeel goes from meat to tallow. Reheating gets the fat liquid again but does nothing for water that already left, so a reheated overcooked lamb patty is greasy and dry simultaneously. Cook to 155–160°F, and get it from the fire to the plate to the table without a holding step.
Ask for shoulder grind and ask the age of the animal if the counter knows it — domestic spring lamb is milder than imported mutton-adjacent product, and that difference is bigger than anything you'll do with spices. Look for 20–25% fat; leaner than about 15% and kofta won't hold together or stay moist, fattier than about 30% and it renders into a puddle on a grill. A single coarse pass through a 3/16 inch plate is right, and you want to see white fat flecks distinct from the deeper red lean — lamb lean is noticeably darker than pork or veal. Grinding it yourself from a bone-in shoulder gives you control over the ratio and lets you trim off hard external fat, which carries the strongest flavor. Vacuum-packed imported grind often smells strong on opening; give it 10 minutes of air before deciding.
Doneness: USDA calls for 160°F on any ground meat, lamb included. Texturally the useful window is 155–160°F: set, barely pink, fat still in the meat. Past 165°F the fat has largely left. Serve above 130°F — below that the fat begins solidifying on the palate.

Yes in structure, no in behavior. Beef fat melts around 110–120°F too, so the serve-it-hot rule carries over, but beef lacks the branched-chain fatty acids, so a beef keema or beef kofta will taste flatter under the same spice load. If you're swapping, use 80/20 chuck and lean harder on the spices and browning. Going the other direction — lamb for beef — usually works better, because lamb's flavor fills in for a dish that expected more.
The protein bind never formed. Salt the meat at about 1.25% of its weight and knead it hard for 3–5 minutes until the mass is genuinely sticky and clings to an upturned palm — that's dissolved myosin, and it's the only glue in the recipe. Second cause is water: grated onion, wet herbs, and chopped tomato all release liquid that keeps the mix from setting. Squeeze grated onion dry in a towel first. Third, rest the formed skewers cold for 30 minutes so the network firms before it hits heat, and don't turn them until the first face has set a crust.
20–25% is the working range for kofta, patties, and meatballs. Below 15% it goes crumbly and dry because there isn't enough rendering fat to fill the space the water vacates at 160°F. Above 30% you lose too much on a grill and get flare-ups. For a keema or a ragù you can start fattier on purpose and pour off what you don't want after the crumble has browned, which gives you control the package label doesn't.
