Not better — different. Fresh egg pasta is tender and silky, ideal for delicate sauces, filled shapes, and baked dishes. Dried semolina pasta is chewier and holds up to bold, oily sauces (a good bronze-die dried pasta is its own craft). Keep both; reach for fresh when you want luxury and speed.

How do you cook fresh pasta?

Fast — usually two to four minutes in well-salted boiling water, versus eight-plus for dried. It's done when it floats and is tender with a slight bite. Frozen filled pasta goes straight from freezer to boiling water, no thawing, plus a minute or two.
