Nduja Pasta, and where to source it

Nduja Pasta — 5best2buy.com 5BEST2BUY.COM Nduja Pasta Italian 5best2buy.com

Nduja is a spreadable Calabrian salami that melts into its own chile-red fat, and that rendered fat is the sauce. Warm it slowly so it breaks down instead of frying, then slacken it with starchy pasta water until it coats the noodles in a glossy emulsion. A handful of toasted breadcrumbs on top brings the crunch the soft sauce lacks.

The Method
  1. Toast the crumbsFry the breadcrumbs in a little oil until deep gold, then set them aside. This is your only crunch, so take them to real color.
  2. Melt the ndujaWarm the nduja with garlic in a wide pan over medium until it collapses into orange fat, about 3 to 4 minutes. Keep it gentle so it renders rather than fries.
  3. Burst the tomatoesAdd the cherry tomatoes and press them until they split and slump into the fat, building a loose sauce.
  4. Emulsify and tossPull the pasta a minute early and toss it in the pan with a splash of its water until the sauce turns glossy and clings. Finish with pecorino and the toasted crumbs.

Straight Answers
Can you make Nduja Pasta in an air fryer? — Yes

Yes — this is exactly what an air fryer does well. Work in a single layer so the air can move, and shake or flip halfway for even crisping. It runs a touch faster than the oven, so check early.

Can you freeze Nduja Pasta? — Yes

Yes — it freezes well. Cool it fully, portion into airtight containers, and it keeps a few months; thaw in the fridge and reheat gently.

Can you make Nduja Pasta ahead of time? — Prep ahead

Best fried to order — the crunch fades if it sits. Do the breading or shaping ahead and cook it fresh when you serve.

Is Nduja Pasta gluten-free? — Not as written

Not as written — it contains gluten. Make it gluten-free: swap in a gluten-free pasta or noodle (check the other labels too).

Is Nduja Pasta vegan? — Vegetarian, not vegan

It’s vegetarian but not vegan as written — it has dairy. Make it vegan: use plant milk, oil, or a vegan cheese for the dairy.
