The Method
  1. Start the pastaBoil the spaghetti in lightly salted water and pull it a minute under al dente. Save a cup or two of the starchy water before you drain — it's the sauce.
  2. Gild the garlicWarm the olive oil gently and add the sliced garlic and chile. Keep the heat low and coax the garlic to pale gold and sweet — the second it browns it turns bitter and you start over. This slow patience is the whole skill.
  3. EmulsifySplash pasta water into the garlic oil to loosen it, add the drained spaghetti and more pasta water, and toss hard. The oil and starchy water come together into a light, glossy sauce that clings to the strands.
  4. FinishOff the heat, toss through the parsley and a last thread of raw olive oil. Taste for salt, and eat it right away — standing at the stove is traditional.
