Miso
Real unpasteurized fermented miso — white for mellow, red for deeper. Whisk it in off the heat to keep it alive.
3–4 tbsp
Tofu
Soft or silken, cut into small cubes and warmed through gently. Fresh craft tofu is worlds better.
½ block
Dashi, scallion & wakame
A simple dashi base (kombu, or instant), scallion, and a little seaweed. Fresh/pantry.

The Method
  1. Warm the dashiBring the dashi to a bare simmer — never a rolling boil once the miso goes in.
  2. Add the tofuSlip in the cubed tofu and any wakame and warm through gently for a couple of minutes.
  3. Whisk in the misoTake the pot off the heat. Loosen the miso with a ladle of the warm broth in a bowl, then stir it back in — off the boil, always.
  4. ServeScatter with sliced scallion and serve immediately, before it sits and separates.

Not on its own — an air fryer can’t hold a pool of liquid. You can simmer it in an oven-safe dish or a silicone insert made to fit the basket, but the broth won’t reduce or brown the way it does on the stove, and that insert comes out scorching, so use oven mitts. For real depth, a pot on the stove wins.

Can you freeze Miso Soup? — Yes

Yes — it freezes well. Cool it fully, portion into airtight containers, and it keeps a few months; thaw in the fridge and reheat gently.
