The Method
  1. Hydrate in lemonSoak the fine bulgur in the fresh lemon juice for 15 minutes until tender. The acid seasons the grain from the inside.
  2. Chop dryWash and thoroughly dry the parsley, then chop it fine with a sharp knife. Wet or bruised herbs weep and the salad turns to slush.
