The Method
  1. ZabaglioneWhisk yolks and sugar over a double boiler until thick and pale, about 8 minutes, then cool.
  2. CreamFold mascarpone into the cooled yolks, then fold in 1 cup of softly whipped cream until smooth.
  3. DipDip each ladyfinger in the cooled espresso for one second per side and line the bottom of a dish.
  4. LayerSpread half the cream, dust with cocoa, repeat with a second layer, then chill at least 6 hours before serving.
