Ground beef isn't a cut, it's a decision about two things: which muscle got ground and how much fat went in with it. The number on the label — 80/20, 85/15, 90/10 — is the percentage of lean to fat by weight, and it dictates almost everything about how the meat behaves in a pan. Get that number wrong for the job and no technique saves it.

What it is

Most commodity ground beef is trim: the odd-shaped pieces left after the primals are broken into steaks and roasts, blended to hit a fat spec. When the label names a cut, USDA rules say it has to come from that primal. Chuck is the shoulder — hard-working, collagen-rich, and naturally fatty, so it grinds out around 78–82% lean with no adjustment, which is why 80/20 and 'ground chuck' usually mean the same thing. Round is the hind leg, a locomotion muscle with little intramuscular fat, and it grinds at 90–93% lean. Brisket (pectorals) and short plate run fattier still, in the 25–30% range, which is why house blends lean on them. Legally, 'ground beef' can't have fat added back and can't exceed 30% fat; 'hamburger' can have beef fat added to hit the spec. Neither may contain water, binders, or extenders.

Why it cooks the way it does

Muscle is roughly 75% water held inside protein cages. Myosin starts denaturing near 120°F, actin around 150–160°F, and as those proteins contract they squeeze water out — a patty cooked to 160°F has shed something like 20% of its starting weight. Rendered fat is what fills the space that water leaves; it melts between about 105°F and 130°F and coats the protein strands so the bite still reads as moist. That's the whole 80/20 argument: 20 grams of fat per 100 can occupy the void, 10 grams can't. Grinding also matters mechanically — chopping the muscle destroys the grain and cuts the collagen into pieces small enough to soften in minutes instead of hours, which is why a $6 chuck roast needs four hours and a chuck burger needs four minutes. The other consequence of grinding is bacterial: whatever was on the surface of the meat is now distributed through it, so ground beef has no sterile interior the way an intact steak does.

How to cook it

Why it works

A 2 oz ball pressed to about 1/4 inch has enormous surface area against 450°F+ metal, so the Maillard crust forms in 60–90 seconds — faster than the interior can lose meaningful water.

How

Loose 2–2.5 oz balls of 80/20, hot cast iron or steel, press hard for the first 10 seconds only, don't touch it again. Flip at 90 seconds when the edges lace and brown, cheese on, 45 seconds more. Salt the outside of the ball, never the mix.

Why it works

At 3/4 inch you're managing a gradient — you want a crust plus a center that hasn't hit the temperature where fat has fully rendered out and left.

How

6 oz of 80/20 or 75/25, 3/4 inch thick, a dimple pressed in the center so it doesn't dome. Direct heat 3–4 minutes a side. 155–160°F center. Rest 3 minutes so the rendered fat redistributes instead of running out the first bite.

Why it works

Here you want fond — the browned residue that dissolves into the liquid later — which means you need surface contact and evaporation, not steam.

How

Hot pan, single layer, no more than about 1 lb at a time. Leave it undisturbed 3–4 minutes to build a crust, then break it up. If liquid pools, pour it off and keep going or you're boiling. 90/10 works fine here, because the sauce supplies the fat and the liquid.

Bound mixes — meatballs, meatloaf, kofta
Why it works

This is the one case where you want the springy texture. Salt at 1–1.5% by weight, worked into the meat, dissolves myosin into a sticky sol that sets into a continuous protein network when cooked — that's what holds a meatball together.

How

Weigh the meat, salt at 1–1.5%, mix hard by hand 2–3 minutes until the mass turns tacky and clings to your palm when you turn it over. Add a panade (bread soaked in milk, roughly 1/2 cup per lb) to trap water the proteins would otherwise expel.

What ruins it

Buying 90/10 for burgers and cooking it to 160°F

At 160°F the myosin and actin have both contracted and driven out roughly a fifth of the patty's weight as water. In 80/20 the fat that renders at 105–130°F moves into that vacated space and the bite still gives. In 90/10 there isn't enough — you get a dense pad of dehydrated protein fiber. Nothing recovers it, because the water didn't hide somewhere, it left the pan as steam and drippings, and protein that has contracted doesn't relax on resting. Sauce, mayo, and cheese sit on the surface; they don't get inside a cooked patty. If you already own 90/10, use it where liquid and fat come from elsewhere: bolognese, chili, meatloaf with a panade.

Buying it

Ask what it was ground from and when it was ground — a counter that grinds daily will tell you both. Coarse is better than fine: a 3/16 inch plate, single pass, leaves visible red and white particles. If the package looks like uniform pink paste, the fat was smeared through the grinder instead of chopped, which means it will render out early and leave the meat dry. 80/20 chuck is the default for burgers and anything patted into a patty; 85/15 is the general-purpose ratio; 90/10 belongs in sauces. Surface color is not a freshness test — bright cherry red is oxygenated myoglobin, and the purple-red interior of a chub or a vacuum pack is normal. Uniform gray-brown throughout with a slick, tacky surface is old. For a home blend, 2 parts chuck to 1 part brisket lands around 75/25 and grinds cleanly if you chill the meat and the grinder parts to 32–34°F first.

Doneness: USDA target is 160°F for ground beef, and the reason is the grind, not the beef — surface bacteria are now throughout the meat. FSIS lethality tables give equivalent kills at lower temps held longer: about 3 minutes at 145°F, 1 minute at 150°F, roughly 20 seconds at 155°F, instant at 160°F. Visually: 155–160°F is firm with at most a thin pink band; 165°F and up is gray, crumbly, and past the point where 20% fat can compensate.

80/20 vs 90/10 ground beef — which one should I buy?

80/20 for anything you form into a patty and cook by dry heat, because the rendering fat is what keeps the cooked protein from reading as dry. 90/10 for anything that gets simmered in liquid — bolognese, chili, sloppy joes, stuffed peppers — where the sauce supplies moisture and 20% fat would just leave a slick on top. 85/15 splits the difference and is the right single package if you only want to buy one.

Is ground chuck the same thing as ground beef?

No. 'Ground beef' is a blend of trim from anywhere on the carcass, capped at 30% fat. 'Ground chuck' has to come from the shoulder, which puts it naturally around 80/20 with a strong beef flavor from a well-exercised muscle. 'Ground round' is the hind leg at roughly 90/10 and tends toward dry. 'Ground sirloin' sits near 90/10 too. If you want predictable burgers, buy ground chuck rather than generic ground beef, because generic is whatever the trim spec happened to be that day.

Why does ground beef have to be cooked to 160°F when a rare steak is fine?

A whole muscle is effectively sterile inside; contamination is on the exterior surfaces, and searing a steak kills it there. Grinding takes those exterior surfaces and mixes them through the whole batch, so the center of a burger has the same bacterial load the outside of the roast did. That's a mechanical consequence of the grinder, not a difference in the meat. Grinding a single intact roast yourself, at home, on clean equipment, narrows the exposure — it does not eliminate it.

Why did my burgers come out dense and rubbery?

Two causes, both about myosin. Salting the meat before forming dissolves myosin into a sticky protein solution that sets into a continuous springy network — that's how sausage and meatballs are made, and it's the wrong texture for a burger. Overworking the mix does the same thing mechanically without salt. Handle burger meat as little as possible, form loose balls, and salt only the outside surface right before it hits the heat.
