Dried egg lasagna sheets with real bite, or fresh sheets if you can get them. Bronze-die, slow-dried pasta holds its structure through a long bake instead of turning to paste.
The ragù's body. California-grown, organic crushed tomatoes or purée — plus a spoon of paste for depth. (True bottled "passata" is mostly an Italian import; good crushed tomato is the honest US answer.)

The Method
Build the ragùSoften a fine soffritto of onion, carrot, and celery in olive oil, low and slow. Add the beef and pork and brown them properly. Stir in tomato paste, deglaze with the red wine, then add the crushed tomatoes, a splash of milk, and a bay leaf. Simmer as low as your stove goes for 2–3 hours — this is where the flavor is made.
