The Method
  1. Blanch the bones firstCover with cold water, bring to a boil, boil ten minutes, then dump it and scrub the bones. This removes the scum that would otherwise make the broth grey and gritty. It looks wasteful and it is essential.
  2. Boil hard, not simmerFresh water to cover, then a rolling boil for eight hours. This is the one stock where aggression is correct.
