Do dried vegetables actually taste good, or is this survival food?

Good ones taste like the vegetable — freeze-drying removes water, not flavor. Freeze-dried vs. air-dried (dehydrated) — what's the difference?

Freeze-drying pulls water out at low temperature under vacuum, keeping color, shape, and nutrients best, and rehydrating fast. Air-dried (dehydrated) is warmer and denser, great for long-simmered soups and stocks. Freeze-dried is closer to fresh; dehydrated is chewier and even longer-keeping.

How do I cook with them?
