Millionaire's Shortbread, and where to source it

Three layers, each with its own trick: a crisp shortbread base baked pale, a caramel cooked to 235F soft-ball so it sets sliceable, and tempered chocolate on top that snaps clean. Cool each layer fully before adding the next or they slide.

The Ingredients — and where to get them
Cook for 16 bars
Flour
Builds the shortbread base; all-purpose gives a crisp, tender crumb.
2 cups
Butter
The bulk of the shortbread and the caramel; use a good salted butter.
1 1/4 cups
Sugar
Sweetens the shortbread; more cooks into the caramel.
1 cup
Condensed milk
The body of the caramel; a full can cooks to a chewy set.
1 can
Dark chocolate
Tempered for the top so it snaps clean; use a good bittersweet bar.
8 oz
Corn syrup
A spoonful keeps the caramel smooth and stops it crystallizing.
