Tuna is red because it's built to swim without stopping — the loin is loaded with myoglobin the way a beef muscle is, and it behaves like beef in the pan too. The loin is 1-2 percent fat with almost no connective tissue, so there's nothing to melt and nothing to hold water once the fibers let go. Sear the outside, leave the middle raw, or accept sawdust.

What it is

Tuna never stop swimming — they're ram ventilators, so forward motion is how they breathe, and they're regionally endothermic, running a countercurrent heat exchanger called the rete mirabile that holds their swimming muscle above the surrounding water temperature. Sustained work like that requires oxygen storage, so the muscle is dense with myoglobin, which is why the flesh is red raw and why it browns like meat rather than turning white like cod. There are two distinct muscles on the animal: the dark red strip along the lateral line, called chiai or the bloodline, is slow-twitch cruising muscle with the highest myoglobin and iron and a strong metallic flavor, and it gets trimmed off; the four big loin quadrants are the lighter muscle you buy. Fat distribution runs from about 1-2 percent in the back loin (akami) up to 10 percent in the mid-belly and 20-25 percent in the fattiest belly (otoro), and only bluefin and bigeye carry serious fat — yellowfin and skipjack are lean top to bottom, and albacore sits in between at 5-8 percent.

Why it cooks the way it does

The loin is essentially a bare protein-and-water matrix: high myoglobin, very low intramuscular fat, and only thin sheets of silverskin dividing the quadrants — there is no collagen network and no marbling to buffer anything. Myosin starts denaturing around 120°F and the flesh goes from translucent red to opaque, and past roughly 130°F the actin denatures and the fibers contract hard, forcing water out of a muscle that has no fat or gelatin to fill the space. At the same time the myoglobin oxidizes to metmyoglobin, which is the shift from cherry red to gray-brown, and both changes are one-way. That's the whole reason canned tuna exists in oil or water: cooking it through requires adding back a liquid the fish can no longer supply for itself. Tuna is also a scombroid fish, meaning it carries high free histidine, and if it's temperature-abused bacteria convert that to histamine — which is heat-stable and survives cooking, freezing, and canning.

Why it works

You're browning a shell and deliberately not cooking the interior, because everything past 130°F costs you texture with no gain.

How

Cut steaks 1 to 1.5 inches thick. Dry the surface, oil it, get the pan smoking. 45-60 seconds per side, plus 15 seconds on each narrow edge if the steak is thick. The cooked band should be under an eighth of an inch; center at 105-110°F. Slice against the grain.

Why it works

The loin's texture at its best is a raw-protein texture, and no heat treatment improves it — every degree from here only subtracts.

How

Trim off bloodline and silverskin, chill hard to 34°F so the knife doesn't drag, slice across the grain at about a quarter inch for crudo or cube for poke. Dress right before serving — citrus or soy will start denaturing the surface within minutes and turn it opaque and dull.

Olive-oil confit
Why it works

It's the one way to cook tuna through without wrecking it: fat surrounds the fish and replaces the water the fibers push out, so the texture goes flaky and soft instead of chalky.

How

Salt the loin an hour ahead, submerge in olive oil held at 150-160°F with aromatics — an oven at 175°F or a low burner with a thermometer both work. 30-45 minutes for a 2-inch piece. Cool it in the oil; it keeps under oil for a week.

Why it works

Hard radiant heat gives you the char without the dwell time, which is exactly what a fish with a 20-degree working window needs.

How

Coals hot enough you can't hold a hand over them for two seconds. Oiled grates, 90 seconds per side for 1.25-inch steaks, one flip. Do not close the lid — trapped convection heat is what turns the middle gray.

What ruins it

Cooking a loin steak past medium-rare

The loin has 1-2 percent fat and no meaningful collagen, so it's water held in protein and nothing else. Once the fibers contract past about 130°F they expel that water and nothing moves in to take its place — the muscle collapses into dry bundles that break apart into chalky shards under a fork, and the myoglobin oxidizes to gray-brown at the same time so it looks as bad as it eats. This is not a moisture problem you can solve with a sauce or a pan gravy, because the structural water is gone from inside the cells; anything you add sits on the outside. It's also why every commercially cooked-through tuna product on earth is packed in added oil or water. If you need tuna cooked through, don't fight it with a steak — confit it in fat instead.

Buying it

Ask for a center-cut piece off the loin, cut across the grain, at least an inch thick — thin steaks give you no room between the seared shell and the raw core. Look for flesh that's translucent and wet-looking rather than dull and opaque, with no browning at the edges and no gapping between the muscle segments. Uniform neon cherry-red with zero variation across the whole piece is a warning: some tuna is treated with carbon monoxide or 'tasteless smoke,' which binds myoglobin into carboxymyoglobin and locks the color in place long after the fish has degraded, so the usual visual freshness cue stops working. 'Sushi grade' has no legal definition and no inspection behind it — the useful questions are when it was harvested, whether it's been held at 32-34°F the entire time, and whether it was frozen. Ask what species: yellowfin and bigeye are the standard ahi steaks, bluefin is expensive and fattier, albacore is softer and lighter, skipjack is small and lean and mostly goes to cans. Trim the dark bloodline and the silverskin sheets between quadrants yourself if the counter didn't — that silverskin turns into chewy strings under heat.

Doneness: Rare: 105-115°F center, red and translucent. Medium-rare: 120-125°F, and that's the outer limit for a steak. Past 130°F the loin turns gray-brown and chalky. Confit is a texture target, not an internal one: 150-160°F oil until the flesh separates into flakes under light pressure. Albacore is the most forgiving species and skipjack the least.

What's the difference between ahi, yellowfin, and bluefin tuna?

Ahi is a Hawaiian word used commercially for both yellowfin and bigeye, so an 'ahi steak' at the counter is usually one of those two. Yellowfin is lean, 1-2 percent fat in the loin, and it's the standard seared-steak fish. Bigeye is a little fattier and darker. Bluefin is a different animal entirely — much higher fat, especially in the belly, which is where toro comes from — and it's priced accordingly and under heavy fishing pressure.

Is sushi-grade tuna a real thing?

No. There's no legal standard, no grading body, and no inspection tied to that phrase — anyone can print it. What actually matters is handling: bled and iced immediately on the boat, held at 32-34°F, and how many days it's been. FDA's parasite rule requires most fish for raw service to be frozen at -4°F for seven days, but it specifically exempts tuna in the genus Thunnus plus skipjack, because parasite risk in those species is low. Buy from a counter that will answer when you ask about harvest date and cold chain.

Why is my tuna steak dry and chalky?

You cooked it past about 130°F. The loin is 1-2 percent fat with essentially no connective tissue, so once the fibers contract and squeeze out their water there's nothing left to hold the texture together, and it breaks into dry shards. Sear it 45-60 seconds per side over the hottest heat you have and pull it with the middle still red at 105-115°F. If you want tuna cooked all the way through, confit it in olive oil at 150-160°F instead — the fat substitutes for the water it loses.

How long do you sear a tuna steak?

45 to 60 seconds per side on a smoking-hot pan or over direct coals, for a steak 1 to 1.5 inches thick. Stand it on its edges for another 15 seconds each if it's thick enough to stay upright. You're aiming for a cooked band no deeper than an eighth of an inch on each face. If the pan isn't hot enough to brown in that time, the heat will keep traveling inward while you wait for color, and you'll end up gray to the center.
