Ground pork is almost always shoulder trim, which means it comes with 20–30% fat already in it and a lot of chopped collagen. That fat is softer than beef fat and melts at a lower temperature, which is both the reason ground pork stays moist in a dumpling filling and the reason it turns greasy the moment it gets warm before cooking. Temperature control during grinding and mixing matters more here than with any other grind.
The shoulder — Boston butt and picnic — is what almost all fresh ground pork is made from, plus jowl and back fat blended in at some shops to hit a ratio. A pig has no collarbone; the front legs are slung to the body by muscle alone, so the shoulder carries the front third of the animal's weight and works constantly at low intensity. That builds a dense collagen network, fat seams between a dozen small muscles running in different directions, and heavy intramuscular fat inside the muscles themselves. The grinder erases all of that architecture, which is exactly the point: the same tissue that needs eight hours as a roast needs eight minutes as a grind. Ground pork sold as 'lean' has usually been cut with loin or leg trim, and it behaves like a different product.
Pork fat is high in oleic acid, so it's soft at room temperature and starts melting in the 85–95°F range — well below beef tallow, which holds solid past 110°F. That low melting point is why ground pork stays moist in a filling and why warm pork fat smears rather than chops. Smearing is the central failure in every ground pork preparation: once fat has been pushed into a paste and pressed onto the surface of the protein particles, it no longer sits in discrete pockets, and on cooking it runs straight out of the product. The fix is thermal — meat and grinder parts at 32–34°F, or the meat partially frozen with firm edges. On the other side, salt at 1.5–2% of the meat's weight dissolves myosin into a tacky sol that traps both the fat particles and added water; that protein network is the entire structure of a sausage or a meatball. Collagen from the shoulder is chopped fine enough to gelatinize during a short cook, so ground pork holds together and gives at the same time.
Salt-extracted myosin plus cold fat particles builds a matrix that traps rendered fat instead of shedding it, so a 70/30 patty reads as moist rather than greasy.

'Ground pork' is plain meat; 'pork sausage' is already salted and seasoned, so don't season it again to a recipe's spec. If you grind your own, use a Boston butt with the fat cap on and it lands near 75/25 without any blending.
Doneness: 160°F is the USDA target for ground pork, same grinding logic as ground beef. Whole-muscle pork drops to 145°F with a rest, but a grind doesn't get that. Texturally, 160°F is where the myosin network is fully set and a sausage springs back to a press; past 170°F the fat has largely rendered out and the texture goes granular.
In sauces, meatballs, chili, and fillings, yes — one for one. The differences are fat behavior and flavor: pork fat melts lower so the dish reads softer and richer, and pork brings less of the iron-and-mineral flavor that beef has. In a burger it's a real substitution rather than a swap, because a pork patty needs to be cooked to 160°F where a beef patty doesn't, and the texture at that temperature is firmer. Half pork and half beef is the standard compromise for meatballs and meatloaf.

Ground pork is unseasoned fresh meat. Pork sausage is the same grind with salt at roughly 1.5–2%, usually sage, black pepper, and sometimes sugar or cure, and it has often been mixed hard enough to develop a protein bind. That means sausage is already salted — if a recipe calls for ground pork plus salt and you use bulk sausage, you'll overshoot.
