The part you eat is the tail — six segments of fast-twitch flexor muscle that fired the shrimp backward when something tried to eat it. There's no fat in it and almost no connective tissue, so cooking shrimp is nothing but protein timing. The window between set and rubber is about fifteen degrees wide.
Shrimp are decapod crustaceans, and the abdomen — what the counter calls the tail — is one long flexor muscle stack that powers the caridoid escape reaction, a single violent tail-flip that shoots the animal backward. Shrimp tail meat is roughly 78-80 percent water held inside tightly packed fibers, wrapped in a thin collagen sheath, with no intramuscular fat and no marbling — there is nothing in there to render and nothing to melt. The proteins begin setting around 120°F, which is when the flesh goes from glassy to opaque. The color change is a separate reaction: astaxanthin in the shell is normally bound to a protein called crustacyanin that masks it blue-gray, and heat denatures that protein and releases the pigment as orange-red. Past about 140°F the muscle fibers contract along their length and force water out of the cells — that's simultaneously the tight coil and the rubbery bite, and they're the same event. A 20-30 minute soak in 5 percent salt brine with about 1/4 teaspoon of baking soda per pound raises surface pH, which makes the proteins hold more water under heat and brown faster.
With no collagen to break down, the only job is to brown the outside before the center passes 130°F, and that requires a surface hot enough to do it in about a minute a side.
HowPat bone dry, oil the shrimp not the pan, get a carbon steel or cast iron pan to 450-500°F, lay them in a single layer with space between them. 16/20s take 60-90 seconds a side. Pull when the sides are opaque and the center of the thickest part still looks slightly wet.
The shell is a heat shield and a moisture jacket — it buys you 30-60 seconds of margin over direct fire that peeled shrimp don't get.

A rolling boil is 212°F hitting the surface of an item that's finished at 125°F, so the outer eighth-inch races past the point where the fibers contract while you're waiting for a visual cue that only appears after the damage is done. A shrimp curled into a closed O has already contracted along its length and expelled its intracellular water into the pot — that water is gone into the liquid and there is no way to put it back. Butter, sauce, or resting won't fix it; you're just coating a cooked-out fiber bundle. The rule is that a properly cooked shrimp holds a loose C and a ruined one makes an O, and by the time the O forms you're 20-30 degrees over.
Buy by count, not by adjective — 'jumbo' and 'colossal' mean nothing legally, but 16/20 means 16 to 20 headless shell-on shrimp per pound and it's the only honest number on the bag. Common counts run U/10 and U/12 (very large), 16/20, 21/25, 26/30, 31/40, and 41/50 and up for salad shrimp; the bigger the number, the smaller the shrimp. Read the ingredient panel: it should say shrimp and salt. Sodium tripolyphosphate means the shrimp were soaked to pick up water — up to 8-10 percent added weight — and those shrimp feel slick, look glassy, and steam in the pan instead of searing; sulfites (bisulfite, metabisulfite) are used to stop black spot and matter if anyone at the table reacts to them. Wild Gulf browns have a pronounced iodine-mineral flavor from their diet, wild whites and pinks are sweeter and cleaner, and farmed vannamei is milder and far more uniform in size. Almost everything at a 'fresh' seafood case is thawed block-frozen shrimp anyway, so buy IQF frozen and thaw it yourself under cold running water in 10 minutes. Skip pre-cooked shrimp entirely — someone already used your fifteen degrees.
Doneness: Pull at 120-125°F internal; carryover finishes them. Visual cue: fully opaque at the edges with a thin band at the center of the thickest part that still looks translucent and wet, and a loose C-curl. A tight O means overcooked. FDA's blanket 145°F for seafood puts shrimp well past rubber.
It's the count: 16 to 20 headless, shell-on shrimp per pound. Higher numbers mean smaller shrimp, so 41/50 are salad-size and U/12 means under 12 per pound. Count is a regulated, verifiable measure; words like 'jumbo,' 'extra large,' and 'colossal' are not standardized and shift between brands.

The bigger quality variable than wild-versus-farmed is whether they were phosphate-treated: check that the label says only shrimp and salt.
It's not a safety issue — that dark line is the digestive tract, and it's cooked. On shrimp 31/40 and smaller it's barely noticeable. On 21/25 and larger it can hold enough sand to be gritty, so pull it. Slit the back a quarter-inch deep and lift it out with the knife tip; the split also helps the shrimp cook evenly and take on seasoning.
