Salmon is a swimming muscle with fat laid down in sheets between the flakes, and how much fat is in there depends entirely on the species. That fat is your entire margin of error: a farmed Atlantic fillet at 15 percent fat forgives an extra four minutes, and a wild sockeye at 8 percent does not. Everything about cooking salmon is deciding which fish you actually have.
Salmon muscle is built in stacked W-shaped blocks called myomeres, separated by thin sheets of connective tissue called myocommata — those sheets are the seams you see as flakes. The fish is anadromous and swims long distances, but it does it with a mix of a thin red lateral-line strip for cruising and a huge mass of white muscle for burst power, and the white muscle is what you're eating. Fat gets deposited in and around the myocommata and heavily in the belly, which is why the belly flap is the richest part of the fillet and the tail is the leanest. Wild fish build that fat from a marine diet of krill and small fish, and the astaxanthin in those crustaceans is what turns the flesh orange-red; farmed Atlantic salmon get astaxanthin added to their feed, which deposits in the muscle the same way. Sockeye run 8-11 percent fat, chinook 12-18, coho 5-8, pink and chum 3-5, and farmed Atlantic 12-18 or higher.
Fish collagen has far less hydroxyproline than beef or pork collagen, so it denatures and turns to gelatin at a much lower temperature — the myocommata in salmon start letting go somewhere around 120-130°F, where beef collagen needs 160-180°F held for hours. That's exactly why fish flakes and beef shreds: the sheets between the muscle blocks dissolve out from under you. Meanwhile the muscle fibers themselves contract as they pass roughly 140°F, and that contraction pushes out water plus a water-soluble protein called albumin, which coagulates on the surface as white curd. So the white stuff is a temperature alarm, not a defect. The practical consequence: the cooking window sits between 118 and 135°F, and once you're past it, the melting collagen means the flesh will fall apart at the same moment it goes dry.
The skin is a physical buffer between the pan and the flesh, so you can run hot enough to crisp it while the fillet cooks 80 percent of the way from one side and the gradient stays shallow.
HowDry the skin, salt it 15 minutes ahead, press the fillet flat for the first 20 seconds so it doesn't curl. Medium heat, skin down, 6-8 minutes for a 1.25-inch center-cut piece — you can watch the opacity climb the side of the fillet. Flip for 30-60 seconds and pull at 120-125°F.
A low oven shrinks the temperature difference between the edge and the center, so the whole fillet lands within a few degrees instead of giving you a dry quarter-inch rim around a raw core.

Those two failures are the same failure. Lean species get destroyed worst: sockeye at 8 percent fat has nothing to disguise the loss, while a 16-percent farmed Atlantic can absorb the same abuse and still taste like something. Expelled water does not go back in. Sauce sits on top of dry fibers; it doesn't rehydrate them, and the texture stays chalky and stringy no matter what you put on it.
Ask for center-cut portions off the thick shoulder half of the fillet at an even 1 to 1.25 inches — tail pieces taper to half an inch and will be overcooked before the thick end is warm. Press the flesh: it should spring back and the flakes should be locked together. Gaping, where the seams have already split into visible gaps, means the myocommata have started breaking down from age or rough handling, and that fillet will fall apart in the pan no matter what you do. Buy skin on; you can always take it off after cooking, and it's your heat shield until then. Run a finger down the front half against the grain to find pin bones and pull them with needle-nose pliers in the direction they angle, toward the head. Know the species by name rather than by 'wild' or 'farmed': Atlantic salmon is farmed essentially by definition, since there's no meaningful commercial wild Atlantic fishery, while sockeye, coho, chinook, pink, and chum are Pacific and wild. And unless you're standing in Alaska in July, frozen-at-sea wild salmon is usually in better shape than the 'fresh' wild fish that's been in transit for a week.
Doneness: Rare 115°F, medium-rare 120-125°F, medium 130°F. Fatty king and farmed Atlantic hold up to 130; lean sockeye, coho, pink, and chum should come off at 118-122°F. Albumin appearing on the surface means you crossed about 140°F. FDA's 145°F guideline is a food-safety floor for high-risk service, not a texture target.
They cook differently, and that matters more than any ranking. Wild sockeye and coho carry 5-11 percent fat with tighter, firmer muscle, so they cook faster and go dry faster — pull them around 120°F. Farmed Atlantic runs 12-18 percent fat, which buffers heat and gives you several extra minutes of margin, and the flesh is softer and milder. Wild fish also have a better omega-3 to omega-6 ratio because farmed feed includes vegetable oils, but a farmed fillet cooked to 125°F beats a wild fillet cooked to 145°F every time.
A fillet is cut lengthwise off the spine, so the muscle blocks and their connective seams run across the piece and the skin is on one side only — it tapers head to tail and it holds together only as long as those seams do. A steak is cut crosswise straight through the backbone, so it's uniform thickness, has a ring of skin around the whole perimeter, includes both loin lobes plus the fatty belly flaps, and carries rib bones. That skin ring and the bone act as a frame, which is why steaks survive a grill and skinless fillets fall through it.
Albumin — a water-soluble protein that lives in the muscle fluid. When the fillet passes roughly 140°F the fibers contract and squeeze that fluid out, and the albumin coagulates into white curd on the surface. It's harmless, but it's a signal you cooked past the target. Pull at 120-125°F and you'll see almost none of it; a 15-minute salt brine before cooking also cuts it down.
